- 2 cups shredded sharp cheddar cheese

- Optional: A pinch of nutmeg for extra warmth
Substitution tip: If you’re out of sourdough, any hearty bread like whole grain or rye will work beautifully. And if cheddar isn’t your thing, swap it for gouda or mozzarella for a different flavor profile.
Instructions
- In a small bowl, mix together the pumpkin puree, garlic powder, dried thyme, salt, and pepper. If you’re feeling adventurous, sprinkle in a pinch of nutmeg for that extra autumn vibe.
- Spread a generous amount of butter on one side of each slice of bread.
- On the unbuttered side, spread a thin layer of the pumpkin mixture. Top with a handful of shredded cheddar cheese.
- Press another slice of bread on top, buttered side facing outwards.
- Heat a skillet over medium heat. Place the sandwiches in the skillet, pressing down lightly with a spatula. Cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.
- Remove from the skillet and let them sit for a minute to cool slightly. Slice and serve warm.
Pro tip: Use a cast iron skillet if you have one. It gives the bread a beautiful crust that’s hard to beat.
