- 1 pound ground beef
- 4 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1 tablespoon butter
If you don’t have ground beef, try using ground turkey or chicken for a lighter version. No sour cream? Greek yogurt works as a great substitute!
Instructions
- Start by boiling the potatoes in a large pot of salted water. Cook until tender, about 20 minutes. Drain and return to the pot.
- Add the butter, milk, and sour cream to the potatoes. Mash until smooth and creamy, adding more milk if needed to reach your desired consistency. Season with salt and pepper. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 8-10 minutes. Drain any excess fat.
- Stir in the Worcestershire sauce and season with salt and pepper. Cook for an additional 2 minutes.
- To assemble, spoon a generous portion of mashed potatoes into a bowl, top with the beef mixture, and sprinkle with shredded cheddar cheese.
- For extra cheesiness, pop the bowls under a broiler for a minute until the cheese is bubbly and golden.
