  • 1 teaspoon smoked paprika

  • 8 ounces provolone cheese, sliced
  • Fresh parsley, chopped (optional, for garnish)
  • Hoagie rolls or cooked rice, for serving

If you’re out of provolone, feel free to swap in mozzarella or even cheddar—whatever’s in your fridge works just fine. That’s the beauty of home cooking; it’s about using what you have.

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and green bell pepper. Sauté until they are soft and the onions are translucent, about 5 minutes. This is where your kitchen starts to smell like a warm hug.
  2. Push the veggies to one side of the skillet and add the ground beef. Break it up with a spatula and cook until browned and no longer pink, about 8 minutes. If you’re using a leaner meat like turkey, you might want to add a bit more olive oil.
  3. Stir in the minced garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Cook for another 2 minutes until the garlic is fragrant. Remember, if you’re like me and love garlic, you can always add an extra clove.
  4. Reduce the heat to low and lay the slices of provolone cheese over the beef mixture. Cover the skillet and let it cook until the cheese is fully melted, about 2-3 minutes. This is the part where I usually call the kids to the table because they can’t resist the sight of melting cheese.
  5. Sprinkle with chopped parsley if desired and serve hot with hoagie rolls or over cooked rice. My kids love it in rolls, while I prefer it over some fluffy rice—it’s all about personal preference!
