- 1 large loaf of Italian bread
- 1 pound of thinly sliced ribeye steak
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cups shredded provolone cheese
- 4 tablespoons butter, melted
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
If you can’t find ribeye, flank steak works as a great substitute. Provolone is my go-to for that classic cheesesteak flavor, but feel free to experiment with other cheeses you love.

Ready to get started? Here’s how you can bring this delicious loaf to life:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Heat olive oil in a large skillet over medium heat. Add the sliced onion and bell pepper, sautéing until soft, about 5 minutes.
- Add the ribeye steak to the skillet. Season with salt and pepper, cooking until the meat is browned and cooked through, roughly 6-8 minutes. Set aside.
- Cut the top off your Italian loaf horizontally and hollow out the inside, leaving a 1-inch thick shell.
- In a small bowl, mix together the melted butter, minced garlic, and oregano. Brush the inside of the loaf generously with this garlic butter mixture.
- Fill the loaf with half of the shredded cheese, followed by the steak mixture, then top with the remaining cheese.
- Place the top of the loaf back on, wrap in foil, and bake for 25 minutes in the preheated oven.
- Unwrap the foil and bake for an additional 5-10 minutes, until the bread is crispy and golden brown.
- Remove from the oven and let it rest for a few minutes before slicing and serving.
One tip from my kitchen to yours: don’t skip the resting period after baking. It allows the cheese to set slightly, making it easier to slice and serve neatly.
