- 1 cup fresh or canned corn kernels (drained if canned)
- 1 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk (or dairy-free alternative)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped scallions
- Vegetable oil for frying

Instructions
- Start by prepping your ingredients. If using fresh corn, slice the kernels off the cob. Otherwise, drain your canned corn thoroughly.
- In a large bowl, whisk together the eggs and milk until well combined. This was always my dad’s job, making sure everything was perfectly mixed.
- Add the flour, baking powder, salt, and pepper to the bowl, stirring until there are no lumps. Remember, it’s okay if it’s not perfect—home cooking is all about the imperfections!
- Fold in the corn, cheese, and scallions. This is where the magic happens, as the mixture comes together in a colorful, cheesy blend.
- Heat a large skillet over medium heat and add enough oil to coat the bottom. Using a spoon, drop dollops of the batter into the hot oil, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy. Flip them gently using a spatula.
- Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
- Serve hot and enjoy the crispy, cheesy goodness!
