Feel free to substitute the smoked sausage with turkey sausage or even a plant-based alternative if you’re looking to switch things up. The baby potatoes can be swapped for sweet potatoes for a different flavor profile.
Instructions
- Preheat your oven to 400°F (200°C). While the oven warms up, grab a large baking dish.
- In a large mixing bowl, toss the quartered potatoes with olive oil, ranch seasoning, salt, and pepper until well coated.
- Spread the seasoned potatoes evenly in the baking dish. Bake for 25 minutes until they start to soften.
- Remove the dish from the oven, add the sliced smoked sausage, and stir everything together.
- Sprinkle the shredded cheddar cheese over the top and return the dish to the oven.
- Bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
- Remove the dish from the oven and let it sit for a few minutes. Sprinkle dried parsley on top for a pop of color and flavor.
Pro tip: If you like a bit of crunch, broil for an extra 2-3 minutes at the end. Just keep an eye on it to ensure the cheese doesn’t burn.
