Let’s talk ingredients. You don’t need a long list, just a few pantry staples and some fresh elements to create something truly wonderful.
- 1 large loaf of crusty bread (sourdough or Italian works great)
- 1 1/2 cups shredded mozzarella cheese
- 1 cup fresh spinach, chopped
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (optional for garnish)
- Salt and pepper to taste
If you’re out of mozzarella, don’t fret! Feel free to use cheddar, provolone, or whatever cheese you have on hand. And if fresh spinach isn’t available, frozen spinach (thawed and drained) can be your new best friend.
Instructions
Ready to get your hands a little floury? Let’s dive into the process!
- Preheat your oven to 375°F (190°C).
- Using a serrated knife, carefully cut the loaf of bread diagonally into 1-inch diamonds. Be sure not to cut all the way through—leave the base intact.
- In a small bowl, mix the melted butter with minced garlic, salt, and pepper.
- Place the bread on a large piece of foil on a baking sheet. Use your fingers or a spoon to gently open the cuts in the bread and drizzle in the garlic butter mixture.
- Stuff each cut with chopped spinach and shredded mozzarella cheese, making sure each piece is filled to the brim.
- Sprinkle the grated Parmesan cheese over the top of the loaf.
- Wrap the bread loosely with foil and bake for 15 minutes. Then, open the foil and bake for another 10 minutes until the cheese is fully melted and bubbly.
- Remove from the oven, garnish with fresh parsley if desired, and serve warm.
A little tip from my kitchen: When you’re stuffing the bread, don’t worry about making it look perfect. The more rustic and imperfect, the better it is for pulling apart and sharing!
