  • 12 ounces jumbo pasta shells
  • 1 tablespoon olive oil
  • 2 cups ricotta cheese
  • 1 cup grated mozzarella cheese, plus extra for topping
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 2 cloves garlic, minced
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 cups marinara sauce (store-bought or homemade)
  • Fresh basil for garnish (optional)

Instructions

Let’s walk through the process of creating this dish that will soon become a family favorite:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook the jumbo shells according to package instructions until al dente. Drain and drizzle with olive oil to prevent sticking.
  3. In a large mixing bowl, combine ricotta, mozzarella, Parmesan, egg, chopped spinach, garlic, nutmeg, salt, and pepper. Mix until well blended.
  4. Spread 1 cup of marinara sauce on the bottom of the prepared baking dish.
  5. Stuff each shell with about 2 tablespoons of the cheese and spinach mixture and place them in the baking dish.
  6. Pour the remaining marinara sauce over the shells and sprinkle with additional mozzarella cheese.
  7. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Garnish with fresh basil before serving, if desired. Serve hot and enjoy!
