- 12 ounces jumbo pasta shells
- 1 tablespoon olive oil
- 2 cups ricotta cheese
- 1 cup grated mozzarella cheese, plus extra for topping
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
- 2 cloves garlic, minced
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 2 cups marinara sauce (store-bought or homemade)
- Fresh basil for garnish (optional)
Instructions
Let’s walk through the process of creating this dish that will soon become a family favorite:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- Cook the jumbo shells according to package instructions until al dente. Drain and drizzle with olive oil to prevent sticking.
- In a large mixing bowl, combine ricotta, mozzarella, Parmesan, egg, chopped spinach, garlic, nutmeg, salt, and pepper. Mix until well blended.
- Spread 1 cup of marinara sauce on the bottom of the prepared baking dish.
- Stuff each shell with about 2 tablespoons of the cheese and spinach mixture and place them in the baking dish.
- Pour the remaining marinara sauce over the shells and sprinkle with additional mozzarella cheese.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh basil before serving, if desired. Serve hot and enjoy!
