- 8 ounces of pasta (penne or macaroni work well)
- 1 pound ground beef (or turkey for a leaner option)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 can (14 ounces) diced tomatoes
- 1 cup corn kernels (fresh, canned, or frozen)
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 2 cups chicken or beef broth
- Salt and pepper to taste
- Optional: Chopped cilantro, lime wedges for garnish
Instructions
- In a large pot or deep skillet, cook the pasta according to package instructions until al dente. Drain and set aside.
- In the same pot, brown the ground beef over medium heat. Break it up with a spoon as it cooks, about 5 minutes. Drain any excess fat.
- Add the chopped onion and minced garlic to the beef, cooking until the onion is translucent, about 3 minutes.
- Stir in the taco seasoning, ensuring the beef is well-coated with spices.
- Pour in the diced tomatoes, corn, and broth. Bring to a gentle simmer.
- Add the cooked pasta back to the pot, stirring to combine all ingredients.
- Reduce the heat to low and stir in the shredded cheddar cheese and sour cream. Stir until the cheese is melted and the sauce is creamy.
- Season with salt and pepper to taste. Let everything simmer for another 2-3 minutes to thicken.
- Serve hot, garnished with chopped cilantro and lime wedges if desired.
