Follow these easy steps to make your kitchen smell like a cinnamon wonderland:
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the butter and 1 1/2 cups of sugar until the mixture is light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, cream of tartar, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix the remaining 1/4 cup of sugar with the ground cinnamon.
- Roll the dough into 1 1/2-inch balls, then roll each ball in the cinnamon-sugar mixture until well coated.
- Place the cookie balls on the prepared baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are just set and the centers are still soft. Remember, they’ll continue to cook slightly on the baking sheet.
- Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
