- 12 ounces egg noodles
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Begin by cooking the egg noodles according to the package instructions. Once cooked, drain them and set aside.
- In a large skillet, heat the butter and olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until they’re golden brown and cooked through, about 6-8 minutes.
- Add the minced garlic to the skillet and sauté until fragrant, about 1 minute. Be careful not to burn it, as it can turn bitter.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for a few minutes to reduce slightly.
- Add the cooked noodles to the skillet, tossing them to coat evenly in the buttery sauce.
- Stir in the Parmesan cheese until melted and everything is well combined. Taste and adjust seasoning as needed.
- If desired, sprinkle with fresh parsley before serving for a pop of color and flavor.
