Ingredients
Scale
Gathering the ingredients for this recipe is a breeze, and you might already have most of these in your pantry:
- 12 ounces of pasta (penne or rotini work well)
- 1 pound of boneless, skinless chicken breasts, diced
- 6 slices of bacon, chopped
- 1 cup of ranch dressing
- 1 cup of heavy cream
- 1 cup of shredded cheddar cheese
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Substitution tips: You can use turkey bacon for a leaner option, or swap in cooked rotisserie chicken to save time.
Instructions
Let’s get cooking! Follow these steps for an easy and delicious meal:
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the skillet.
- Add the diced chicken to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the ranch dressing and heavy cream, stirring to combine. Let the mixture simmer for 2-3 minutes, allowing it to thicken slightly.
- Stir in the shredded cheddar cheese until melted and smooth. Return the cooked chicken and bacon to the skillet, mixing to coat them in the sauce.
- Add the cooked pasta to the skillet, tossing everything together until well combined. Taste and adjust seasoning if necessary.
- Garnish with fresh parsley before serving for a pop of color and freshness.
Tip from my kitchen: If you’re in a rush, you can cook the bacon and chicken simultaneously in separate pans to save time.
