Gather these ingredients, and let’s get started:
- 2 cups cooked chicken, shredded (rotisserie chicken works great!)
- 8 slices of bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 4 tablespoons ranch dressing
- 4 large flour tortillas
- 1/4 cup chopped green onions
- Salt and pepper, to taste
If you’re out of cheddar, feel free to substitute with mozzarella or any cheese of your choice. And for a little heat, you can add a dash of hot sauce to the ranch.
Instructions
- Start by preheating your oven to 375°F. Line a baking sheet with parchment paper to prevent sticking.
- In a large bowl, combine the shredded chicken, crumbled bacon, shredded cheese, ranch dressing, and chopped green onions. Season with salt and pepper. Mix until everything is well combined.
- Lay a tortilla flat and place a generous scoop of the chicken mixture in the center. Roll it up tightly and place it seam-side down on the prepared baking sheet.
- Repeat with the remaining tortillas and filling. Once all roll ups are assembled, you can spray them lightly with cooking spray for extra crispiness.
- Bake in the preheated oven for 15-20 minutes, or until the tortillas are golden brown and the cheese is melted and bubbly.
- Let them cool for a few minutes before serving. Cut each roll up in half diagonally for easier serving, if desired.
Here’s a little tip from my kitchen: If you’re in a real hurry, skip the baking and enjoy them cold. They’re just as delightful!
