- 2 cups cooked fusilli pasta
- 1 pound grilled chicken breast, sliced
- 1/2 cup Caesar dressing
- 1/4 cup grated Parmesan cheese
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/4 cup croutons
- Salt and pepper to taste
- 1 tablespoon olive oil
If you’re out of romaine, spinach or kale can be a great substitute. And if you love a bit of zest, toss in some lemon juice for an extra kick!
Instructions
- Begin by cooking your fusilli pasta according to the package instructions. Once cooked, drain and set aside to cool.
- While the pasta is cooling, heat the olive oil in a pan over medium heat. Season the chicken breasts with salt and pepper, then grill until cooked through, about 6-7 minutes per side. Once done, slice into thin strips.
- In a large bowl, combine the cooked pasta, grilled chicken, halved cherry tomatoes, and chopped romaine lettuce.
- Pour the Caesar dressing over the mixture and toss until everything is well coated.
- Sprinkle the Parmesan cheese and croutons on top, giving it one final toss.
- Taste and adjust the seasoning with more salt and pepper, if needed.
- Serve immediately or chill in the refrigerator for a more refreshing taste.
