Ingredients
Scale
With a few simple ingredients, you can whip up this comforting casserole in no time. Here’s what you’ll need:
- 2 cups cooked chicken, shredded (rotisserie chicken works great!)
- 4 cups cauliflower rice
- 1 cup broccoli florets
- 1 cup cheddar cheese, shredded
- 1 cup Greek yogurt
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a little kick!)
Instructions
Let’s get cooking! Here’s how to bring this nourishing casserole to life:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add broccoli florets and sauté for 3-4 minutes until they start to soften. This step reminds me of my mom’s knack for adding greens to every meal.
- Add the cauliflower rice to the skillet and cook for another 3 minutes. Stir in garlic powder, onion powder, salt, black pepper, and red pepper flakes if using. Mix well.
- In a large mixing bowl, combine Greek yogurt and chicken broth. Stir in the shredded chicken, sautéed vegetables, and half of the shredded cheddar cheese.
- Transfer the mixture to a greased baking dish, spreading it evenly. Top with the remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly, and the edges are golden. It’s like opening a gift when you see that bubbling cheese!
- Let it cool for a few minutes before serving. This is the hardest part for my kids, who are always eager to dig in!
