Instructions
- In a bowl, whisk together the flour, eggs, milk, and olive oil until smooth, creating your crepe batter. Let it rest for 20 minutes to allow the flour to absorb the liquid.
- While the batter is resting, season the chicken with cumin, coriander, paprika, cinnamon, turmeric, garlic, salt, and pepper. Mix well to coat the chicken evenly.
- Heat a non-stick pan over medium heat. Cook the chicken until golden brown and cooked through, about 6-8 minutes. Set aside.
- In the same pan, pour a ladleful of the crepe batter and swirl it around to cover the bottom of the pan. Cook for about 1-2 minutes on each side until golden. Repeat until all batter is used.
- In a small bowl, mix Greek yogurt and lemon juice to make a tangy sauce.
- To assemble, place a crepe on a plate, add a few slices of chicken, top with diced cucumber and tomato, and drizzle with the yogurt sauce. Garnish with fresh parsley.
