  • Wooden skewers, soaked in water for 30 minutes
  • 1/2 cup smooth peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce (for peanut sauce)
  • 1 tablespoon honey
  • 1/4 cup coconut milk (for peanut sauce)
  • 1/4 cup water

Instructions

  1. In a large bowl, combine coconut milk, soy sauce, brown sugar, fish sauce, curry powder, garlic, ginger, and vegetable oil. Stir until the sugar dissolves.
  2. Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.
  3. While the chicken marinates, prepare the peanut sauce. In a small saucepan over low heat, combine peanut butter, lime juice, soy sauce, honey, coconut milk, and water. Stir continuously until smooth and heated through, about 5 minutes. Remove from heat and let cool.
  4. Preheat your grill to medium-high heat. Thread the marinated chicken onto the soaked skewers.
