  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 teaspoons chipotle powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

If chipotle powder is too spicy for your taste, feel free to swap it with smoked paprika for a milder option. And if you’re out of brown rice, quinoa or white rice works just as well.

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the olive oil, chipotle powder, smoked paprika, garlic powder, salt, and pepper.
  3. Place the salmon fillets on the prepared baking sheet, skin-side down. Brush them generously with the chipotle mixture.
  4. Bake the salmon for 12-15 minutes or until it flakes easily with a fork.
  5. While the salmon is baking, warm the black beans and corn in a small saucepan over medium heat, stirring occasionally.
  6. In a large bowl, combine the cooked brown rice, warmed black beans, and corn.
  7. Once the salmon is cooked, remove it from the oven and let it rest for a couple of minutes.
  8. Assemble your Chipotle Salmon Bowls by dividing the rice mixture among four bowls. Top each with a salmon fillet, diced avocado, and a sprinkle of cilantro.
  9. Serve with lime wedges on the side for a zesty kick.
