- 1 cup chocolate graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup caramel sauce
- 1 tablespoon all-purpose flour
- Pinch of salt
Feel free to swap the chocolate graham cracker crumbs for regular ones if that’s what you have on hand. And if you’re in the mood for a bit of nuttiness, try adding a handful of chopped pecans or walnuts to the crust.
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, mix the chocolate graham cracker crumbs and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
- Bake the crust for about 10 minutes, then let it cool while you prepare the filling.
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy, about 2-3 minutes.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and a pinch of salt.
- In a small bowl, toss the chocolate chips with the tablespoon of flour to prevent them from sinking to the bottom, then fold them into the cheesecake batter.
- Pour the cheesecake batter over the cooled crust, spreading it evenly.
- Drizzle the caramel sauce over the top of the cheesecake layer. Use a knife or toothpick to gently swirl the caramel into the batter.
- Bake for 30-35 minutes or until the edges are set and the center has a slight jiggle.
- Allow the bars to cool at room temperature for about 30 minutes, then transfer them to the fridge to chill for at least 2 hours before slicing.
