Ingredients
Scale
- 1 cup graham cracker crumbs
- 2 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- 1/2 cup semisweet chocolate chips
- 1/4 cup caramel sauce
- 1/2 cup pecans, chopped
- Pinch of salt
If you’re feeling adventurous, swap the pecans for walnuts or try dark chocolate chips for a bolder flavor. Remember, this is about making it your own!
Instructions
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly.
- In a bowl, combine the graham cracker crumbs and melted butter until the mixture resembles wet sand. Press a spoonful into the bottom of each muffin cup.
- Bake for 5 minutes to set the crust. Remove from oven and let cool while you prepare the filling.
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the vanilla extract and heavy cream, mixing until well combined.
- Spoon the cheesecake mixture over the crusts, filling each cup about three-quarters full.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth. Drizzle over the cheesecake bites.
- Warm the caramel sauce slightly and drizzle it over the chocolate layer.
- Top each bite with chopped pecans and a small pinch of salt.
- Refrigerate for at least 2 hours before serving to allow the flavors to meld together beautifully.
These bites are a testament to the beauty of imperfection. The drizzle might zigzag, and the pecans might scatter, but that’s where the love truly lies.
