Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for easier cleanup.
- In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt. This step reminds me of my dad’s stories about how his mom would always make sure her dry ingredients were “fluffy and free.” Those memories always bring a smile as I whisk away.
- In another bowl, beat the eggs and sugar until they are well combined. Add in the melted butter and vanilla extract, stirring until the mixture is smooth and glossy.
- Gently fold the wet ingredients into the dry ingredients, being careful not to overmix. This is where my kids usually take over, each adding their own twist with a pinch of cinnamon or a dash of espresso powder.
- Stir in the chocolate chips, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared baking dish, smoothing the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remember, we’re aiming for fudgy, not dry!
- Let the dessert cool in the pan for at least 10 minutes before cutting into squares. Serve warm for a gooey treat or let them cool completely for a firmer bite.
