- 1/4 cup cocoa powder
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (almonds or walnuts work great)
- 1/4 cup dark chocolate chips
- 2 cups plain Greek yogurt
- Fresh berries or banana slices for topping
Feel free to swap the nuts for seeds if allergies are a concern, and use any yogurt of your choice to suit dietary preferences.
Instructions
- Preheat your oven to 325°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, cocoa powder, chopped nuts, and salt.
- In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir until the oats are well-coated.
- Spread the mixture evenly onto the prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until the granola is golden and fragrant. Keep an eye on it to avoid burning, as my first batch taught me the hard way!
- Remove from the oven and let it cool completely. Once cooled, stir in the dark chocolate chips.
- To serve, spoon 1/2 cup of Greek yogurt into a bowl, top with 1/4 cup of chocolate granola, and add fresh berries or banana slices.
