Instructions
- Preheat your oven to 325°F (165°C) and line a mini muffin tin with paper liners.
- In a small bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated.
- Press about a tablespoon of the crumb mixture into the bottom of each muffin cup, pressing firmly to create a base. Bake for 5 minutes, then let cool.
- In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy—this should take about 2 minutes.
- Spoon the cream cheese mixture over the cooled crusts, filling each cup almost to the top. Smooth the tops with a spatula.
- Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Spoon the melted chocolate over the cheesecake layer, then sprinkle with toffee bits and a pinch of salt.
- Refrigerate the bites for at least 2 hours before serving to allow them to set.
