- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil

- 1/2 cup heavy cream
- 2 tablespoons fresh lime juice

- Heat the olive oil in a large pan over medium heat. Add the chicken breasts, seasoning them with salt and pepper. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.
- In the same pan, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
- Add the Aji Amarillo paste to the pan, stirring well to combine with the onion and garlic mixture. Cook for another 2 minutes until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Allow the mixture to simmer for 5 minutes.
- Stir in the heavy cream and bring the sauce to a gentle simmer. Return the chicken to the pan, coating it well with the sauce.
- Finish with fresh lime juice, and adjust seasoning with more salt and pepper if necessary. Let everything simmer together for another 5 minutes.
