- 4 ripe peaches, halved and pitted
- 2 tablespoons melted butter
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- A pinch of salt
- Vanilla ice cream (about 4 scoops, more if you’re feeling indulgent!)
If you’re out of brown sugar, don’t worry. White sugar mixed with a bit of molasses works wonders too. And for those of you who love a little kick, a dash of nutmeg adds an extra layer of warmth.
Instructions
- Preheat your grill to medium heat. If you’re using a grill pan, place it on your stovetop to heat.
- In a small bowl, mix the melted butter, brown sugar, cinnamon, vanilla extract, and salt until well combined.
- Brush each peach half with the cinnamon-butter mixture, making sure to cover the cut side generously.
- Place the peaches on the grill, cut side down. Grill for about 3-4 minutes, or until you see beautiful grill marks.
- Flip the peaches and grill for another 2-3 minutes, letting them soften and caramelize slightly.
- Remove the peaches from the grill and let them cool for a minute or two. This is where patience really pays off!
- Top each peach half with a generous scoop of vanilla ice cream. Serve immediately and watch the smiles unfold.
Pro tip: If you’re like me and love experimenting, try adding a sprinkle of toasted almonds on top for a delightful crunch.
