- 8 slices of white or whole wheat bread, crusts removed
- 1/4 cup of softened cream cheese
- 1/4 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 2 teaspoons of ground cinnamon
- 3 large eggs
- 1/4 cup of milk
- 2 tablespoons of butter, for frying
- 1/4 cup of granulated sugar, for coating
Feel free to substitute the cream cheese with a dairy-free alternative if needed, or try adding a tablespoon of cocoa powder for a chocolatey twist!
Instructions
- Start by flattening each slice of bread with a rolling pin. This is a fun step to get the kids involved—my little ones love helping with this part!
- In a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread a thin layer of the cream cheese mixture on one side of each flattened bread slice. Sprinkle with a pinch of cinnamon.
- Roll up each slice tightly and set aside.
- In a shallow dish, whisk together the eggs, milk, and 1 teaspoon of cinnamon until well combined.
- Heat a non-stick skillet over medium heat and melt the butter.
- Dip each roll-up into the egg mixture, ensuring it’s fully coated, then place in the skillet.
- Cook the roll-ups for about 2-3 minutes on each side, or until they are golden brown and crispy.
- Immediately after cooking, roll each in granulated sugar mixed with the remaining cinnamon for that perfect sweet coating.
Pro tip from my kitchen: make sure your skillet isn’t too hot. You want the roll-ups to cook evenly and develop that lovely golden crust.
