- 1 cup unsweetened shredded coconut
- 1 cup macadamia nuts, roughly chopped
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 large egg
If you find yourself without macadamia nuts, feel free to substitute with walnuts or pecans. And if you’re in the mood for a little extra sweetness, try using sweetened coconut instead.
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the shredded coconut, chopped macadamia nuts, flour, granulated sugar, brown sugar, baking powder, and salt. Mix well to ensure everything is evenly distributed.
- In another bowl, whisk together the melted butter, vanilla extract, and egg until smooth and well-blended.
- Pour the wet ingredients into the dry ingredients and stir until a thick dough forms. It might look a bit crumbly at first, but keep mixing until it all comes together.
- Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing each spoonful about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the tops are set.
- Remove from oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
One little tip: If you’re baking with kids, let them help with mixing the dough or scooping it onto the baking sheet. It’s a wonderful way to create memories and instill a love for cooking in the next generation.
