If you find yourself without macadamia nuts, feel free to substitute with walnuts or pecans. And if you’re in the mood for a little extra sweetness, try using sweetened coconut instead.

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, chopped macadamia nuts, flour, granulated sugar, brown sugar, baking powder, and salt. Mix well to ensure everything is evenly distributed.
  3. In another bowl, whisk together the melted butter, vanilla extract, and egg until smooth and well-blended.
  4. Pour the wet ingredients into the dry ingredients and stir until a thick dough forms. It might look a bit crumbly at first, but keep mixing until it all comes together.
  5. Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing each spoonful about 2 inches apart.
  6. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the tops are set.
  7. Remove from oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
