For these recipes, you’ll need a handful of ingredients that are likely already in your kitchen. Here’s what you’ll need:
- 2 cups fresh or frozen corn kernels
- 1 large red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon paprika
Feel free to swap out fresh corn for canned in a pinch or add a kick with some jalapeño if your family loves a bit of heat.
Instructions
- In a large bowl, combine the corn, red bell pepper, red onion, and cilantro.
- Add the lime juice, salt, and black pepper to the bowl, and toss everything together until well combined. Set aside to let the flavors meld.
- For the creamy garlic sauce, whisk together the mayonnaise, minced garlic, lemon juice, and paprika in a separate bowl until smooth.
- Taste the sauce and adjust the seasoning with salt or more lemon juice as desired.
- Chill both the salsa and sauce in the refrigerator for at least 30 minutes before serving to allow the flavors to develop.
