Ingredients
Scale
- 3 cups cooked chicken, shredded (rotisserie works great!)
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup celery, finely chopped
- 1/2 cup red grapes, halved
- 1/4 cup sliced almonds (optional for crunch)
Feel free to swap the regular mayonnaise with a low-fat version or Greek yogurt if you’re looking to lighten things up. And if you’re out of grapes, dried cranberries make a delightful substitute!
Instructions
- In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and black pepper. Stir until well mixed.
- Add the shredded chicken to the bowl, ensuring each piece is coated in the creamy dressing.
- Fold in the chopped celery, red grapes, and sliced almonds if using. Mix gently to avoid crushing the grapes.
- Once everything is combined, cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully.
- Before serving, give the salad a quick stir and adjust the seasoning to taste. Add more lemon juice or a pinch of salt if needed.
My dad used to say, “The best meals are the ones made with a little patience and a lot of heart.” So, let your chicken salad sit; the wait is worth it!
