- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for heat)
- Wooden skewers, soaked in water for 30 minutes
- 1/2 cup unsalted butter, melted
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon red pepper flakes
If you’re out of paprika, smoked paprika or chili powder makes a great substitute. And if fresh herbs are hard to come by, dried parsley works just as well—just use half the amount.
Instructions
- In a large bowl, combine the olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add the chicken cubes and toss to coat. Let marinate for at least 30 minutes, or up to 4 hours for deeper flavor.
- While the chicken marinates, prepare the cowboy butter by mixing the melted butter, parsley, lemon juice, Dijon mustard, Worcestershire sauce, and red pepper flakes in a small bowl. Set aside.
- Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the soaked wooden skewers.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Once cooked, remove the skewers from the grill and brush generously with the prepared cowboy butter. Serve hot and enjoy!
