- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- In a food processor, combine the avocados, cilantro, lime juice, garlic, and olive oil. Blend until smooth, scraping down the sides as needed.
- If you’re feeling adventurous like my dad was with his stories, add the Parmesan cheese and blend again for an extra creamy texture.
- Season the sauce with salt, pepper, and red pepper flakes to taste. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.
