- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup raspberries
- 2 oranges, peeled and segmented
- 1 grapefruit, peeled and segmented
- 1/2 cup Greek yogurt
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- A pinch of salt
If you find yourself short on certain berries, feel free to substitute with what you have on hand. My pantry often dictates my recipes, and that’s perfectly okay. Use blackberries or even canned mandarin oranges if that’s what your cupboard offers!
Instructions
- Start by preparing all your fruits. Hull and slice the strawberries, rinse the blueberries and raspberries, and peel and segment the oranges and grapefruit. This is the part where I usually have a little helper by my side, passing me the fruits and sneaking a berry or two.
- In a small bowl, whisk together the Greek yogurt, honey, vanilla extract, lemon juice, and a pinch of salt. Adjust the honey to taste, especially if your citrus is on the tangier side.
- In a large mixing bowl, gently combine all the fruits. Give them a light toss, being careful not to break the berries.
- Drizzle the creamy dressing over the fruit mixture, gently folding it in until everything is evenly coated. This is where the magic happens—each bite brings a burst of flavor with that creamy goodness.
- Serve immediately or let it chill in the fridge for about 15 minutes to allow the flavors to meld together a bit more.
Remember, cooking is about intuition as much as precision. Don’t worry if a berry gets squished—embrace the imperfection!
