  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 red bell pepper, diced
  • 1 cup baby spinach leaves
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

If you’re looking to lighten things up a bit, you can substitute half-and-half for the heavy cream. And if you’re out of Parmesan, a sharp cheddar would also do the trick!

Instructions

Ready to get cooking? Follow these straightforward steps, and you’ll have a delicious meal ready in no time:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add the garlic and red bell pepper. Sauté for about 2 minutes until fragrant and slightly softened.
  3. Add the orzo to the skillet and stir to coat it with the remaining oil and seasonings. Toast the orzo for about 2 minutes until slightly golden.
  4. Pour in the chicken broth and bring to a simmer. Cook the orzo, stirring occasionally, until almost all the broth is absorbed, about 10 minutes.
  5. Lower the heat and stir in the heavy cream, Parmesan cheese, and spinach. Cook until the spinach wilts and the sauce thickens, about 3-4 minutes.
  6. Return the chicken to the skillet, mixing everything together. Season with salt and pepper to taste.
  7. Garnish with freshly chopped parsley before serving.
