  • 1 teaspoon dried thyme

Feel free to substitute the heavy cream with coconut milk for a dairy-free option, or add a pinch of red pepper flakes for a little kick. Cooking is about adapting and making it your own!

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the heavy cream and chicken broth, stirring gently to combine. Bring the mixture to a simmer.
  4. Stir in the Parmesan cheese and thyme, and season with salt and pepper to taste. Let the sauce thicken for 3-4 minutes.
  5. Gently place the fish fillets into the sauce, spooning some of the sauce over the top. Cover the skillet and let the fish cook for 8-10 minutes, or until it flakes easily with a fork.
  6. Once cooked, serve the fish with a generous ladle of the creamy sauce and a squeeze of lemon juice.

One of my personal tips is to keep an eye on the sauce. If it reduces too quickly, just add a splash more broth. Remember, cooking is an art, not a science!
