Ready to create some magic in your kitchen? Follow these simple steps:
- Start by seasoning the salmon fillets with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes on each side, or until golden and cooked to your liking. Transfer to a plate and set aside.
- In the same skillet, add butter and let it melt. Stir in the minced garlic and cook until fragrant, about 1 minute.
- Pour in the chicken broth and let it simmer for a couple of minutes. Stir in the heavy cream and Parmesan cheese until the sauce begins to thicken.
- Add the Italian seasoning, cherry tomatoes, and spinach, cooking until the tomatoes are tender and the spinach is wilted.
- Return the salmon to the skillet, spooning the sauce over the top. Allow it to simmer for another 2-3 minutes until the salmon is heated through.
