- 1 pound shrimp, peeled and deveined
- 4 large potatoes, peeled and cubed
- 4 tablespoons unsalted butter, divided
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
- Optional: a pinch of red pepper flakes for a slight kick
Instructions
- Start by boiling a large pot of salted water. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes.
- While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet. Season with salt, pepper, and a pinch of red pepper flakes if using. Cook until the shrimp turn pink and are cooked through, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
- In the same skillet, pour in the chicken broth and scrape up any bits from the bottom. Stir in the heavy cream and Parmesan cheese, mixing until the sauce is smooth and creamy.
- Return the shrimp to the skillet, coating them in the garlic cream sauce. Let simmer for another 2-3 minutes to warm through.
- Drain the potatoes and return them to the pot. Add the remaining butter and mash until smooth and creamy. Season with salt and pepper to taste.
- To serve, spoon a generous helping of mashed potatoes onto each plate. Top with the creamy garlic shrimp and sprinkle with fresh parsley. Enjoy immediately.
