Ready to dive in? Here’s what you’ll need:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons chopped fresh herbs (like thyme and parsley)
- 4 cloves garlic, minced
- 6 medium potatoes, peeled and quartered
- 1/2 cup milk
- 1/4 cup butter
- 1 tablespoon honey
- 4 large carrots, peeled and sliced
- Substitution tip: Swap heavy cream for coconut milk for a dairy-free option!
Instructions
Let’s get cooking! Follow these steps:
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook until golden brown on each side, about 5-7 minutes per side.
- Remove chicken and set aside. In the same skillet, sauté garlic until fragrant.
- Add heavy cream, chicken broth, and herbs. Stir well, then return the chicken to the skillet. Simmer on low heat for 10 minutes.
- Meanwhile, boil potatoes in a large pot until tender. Drain and mash with milk and butter until smooth.
- In a separate pan, heat a small amount of butter and add sliced carrots. Drizzle honey over the top and cook until carrots are tender and glazed.
- Serve chicken with creamy sauce over mashed potatoes, alongside honey-glazed carrots.
