Ingredients
Here’s what you’ll need to bring this delightful dish to life:
- 4 boneless, skinless chicken breasts
- 4 ounces cream cheese, softened
- 2 jalapeños, seeded and finely chopped
- 1 cup shredded cheddar cheese, divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 strips of bacon
- 1 tablespoon olive oil
- 1/4 cup heavy cream
If you’re looking for substitutions, you can swap the cream cheese for a low-fat version, or use turkey bacon instead of regular bacon for a lighter option. Not a fan of too much spice? Use only one jalapeño or substitute with bell peppers for a milder flavor.
Instructions
Let’s get cooking! Follow these steps to make your chicken bombs:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- In a bowl, mix together the cream cheese, chopped jalapeños, half of the cheddar cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Butterfly each chicken breast by cutting them halfway through the middle, ensuring not to cut all the way through. This creates a pocket for the filling.
- Spoon the cream cheese mixture into each chicken breast, then fold the breast over to enclose the filling.
- Wrap each chicken breast with two strips of bacon, securing with toothpicks if necessary.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until the bacon is crisp.
- Transfer the chicken to the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the juices run clear.
- While the chicken is baking, prepare the cheddar drizzle by heating the heavy cream in a small saucepan over low heat. Stir in the remaining cheddar cheese until melted and smooth.
- Once the chicken is done, drizzle the cheddar sauce over the top of each chicken bomb before serving.
