- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tablespoons lemon juice (freshly squeezed)
- 4 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 1/4 cup grated Parmesan cheese
If you don’t have heavy cream on hand, you can substitute half-and-half for a lighter version. And if thyme isn’t your favorite, basil or oregano can make a lovely replacement.
Instructions
Ready to make some culinary magic? Follow these steps:
- Start by seasoning the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Transfer to a plate and set aside.
- In the same skillet, add butter and let it melt. Add minced garlic and sauté for about 1-2 minutes until fragrant.
- Pour in the chicken broth, scraping up any brown bits from the bottom of the pan for extra flavor.
- Stir in the heavy cream, lemon juice, and thyme. Bring the mixture to a simmer and let it cook for about 3-4 minutes until slightly thickened.
- Return the chicken breasts to the skillet, spooning the sauce over them. Let it simmer for another 5 minutes.
- Sprinkle with Parmesan cheese and allow it to melt into the sauce.
- Serve hot, garnished with a bit of extra thyme if desired.
One tip from my kitchen to yours: Don’t rush the browning of the chicken. It’s where a lot of the flavor is built, and it’s worth the wait!
