- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced tomatoes and tomato paste, stirring to combine. Let them cook down for about 5 minutes, allowing the flavors to meld.
- Pour in the seafood stock and bring the mixture to a simmer. Allow it to reduce slightly for 10 minutes.
- Stir in the smoked paprika, salt, and pepper. Adjust the seasoning to taste.
- Add the shrimp to the pot, cooking until they turn pink and opaque, approximately 4-5 minutes.
- Lower the heat and stir in the heavy cream, cooking for an additional 5 minutes until the bisque is thick and creamy.
- Remove the pot from heat and use an immersion blender to puree the bisque until smooth. If you don’t have an immersion blender, carefully transfer batches to a countertop blender.
- Serve hot, garnished with fresh parsley.
