Instructions
Let’s get cooking! Follow these simple steps:
- Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper.
- Add the chicken to the skillet and cook until golden brown on both sides, about 5-6 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any brown bits from the bottom of the pan for extra flavor.
- Reduce the heat to medium-low and stir in the heavy cream, Parmesan cheese, and Italian seasoning. Let it simmer for about 5 minutes until slightly thickened.
- Add the chopped spinach and cook until wilted, about 2 minutes. If using, add the sun-dried tomatoes at this stage.
- Return the chicken to the skillet, spooning the creamy sauce over the top. Cover and simmer for an additional 5-10 minutes until the chicken is cooked through.
- Serve immediately, garnished with extra Parmesan if desired.
