- 1/4 cup heavy cream

Instructions

- Heat the olive oil in a large pot over medium heat. Add the diced chicken and cook until browned, about 5-6 minutes.
- Add the onion and garlic to the pot, sautéing until the onion becomes translucent, roughly 3 minutes.
- Pour in the chicken broth and stir in the beans, green chilies, cumin, oregano, chili powder, salt, and pepper. Bring to a simmer and let it cook for 15 minutes.
- Stir in the corn and continue to simmer for another 5 minutes. This step always reminds me of my mom’s knack for adding the perfect twist to a dish.
- Reduce the heat to low, mix in the sour cream and heavy cream, and cook for an additional 5 minutes until the chili is creamy and heated through.
