- 1 pound of salmon fillets, skin removed and cut into 1-inch cubes
- 1 cup of all-purpose flour
- 2 eggs, beaten
- 1 cup of panko breadcrumbs

- 1/4 teaspoon black pepper
- 1/2 cup honey
- 2 tablespoons hot sauce (adjust to taste)
- 1 tablespoon soy sauce

If you don’t have panko breadcrumbs, regular breadcrumbs will do, but panko adds an extra crispiness that’s worth the effort. As for the hot sauce, I often tweak the amount depending on how adventurous my kids are feeling.
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, paprika, salt, and pepper.
- Dip each salmon cube into the flour, shaking off any excess, then into the egg, and finally, coat it in the breadcrumb mixture. Place on the prepared baking sheet.
- Drizzle the coated salmon bites with olive oil and bake for 15-20 minutes, or until golden and crispy.
- While the salmon is baking, prepare the hot honey glaze by combining honey, hot sauce, and soy sauce in a small saucepan over medium heat. Stir until well mixed and slightly thickened, about 3-4 minutes.
- Remove salmon bites from the oven and drizzle with hot honey glaze. Serve immediately and enjoy the symphony of flavors!
