- 1 boneless pork loin roast (about 3 pounds)

- 2 cups fresh spinach, chopped
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons butter, melted
- 1 1/2 pounds baby potatoes, halved
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper or foil for easy cleanup.
- In a small bowl, combine olive oil, salt, black pepper, garlic powder, and dried thyme. Rub this mixture all over the pork loin.
- In a separate bowl, mix together the chopped spinach, breadcrumbs, Parmesan cheese, minced garlic, sun-dried tomatoes, and melted butter. Spread this mixture evenly over the flattened side of the pork loin.
- Roll up the pork loin tightly, securing it with kitchen twine at 2-inch intervals.
- Place the pork loin on the prepared baking sheet. Arrange the halved potatoes around the pork.
- Sprinkle the potatoes with salt, pepper, and fresh rosemary.
- Bake for 1 hour or until the pork reaches an internal temperature of 145°F, and the potatoes are golden and tender, stirring the potatoes halfway through cooking for even browning.
- Let the pork rest for about 10 minutes before slicing. This helps the juices redistribute, making every bite moist and flavorful.
