Unwrap the Flavor: Crispy Stuffed Pork Loin Roast with Golden Potatoes Delight

Learn how to make delicious Crispy Stuffed Pork Loin Roast with Golden Potatoes. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 boneless pork loin roast (about 3 pounds)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 2 cups fresh spinach, chopped
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons butter, melted
  • 1 1/2 pounds baby potatoes, halved
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper or foil for easy cleanup.
  2. In a small bowl, combine olive oil, salt, black pepper, garlic powder, and dried thyme. Rub this mixture all over the pork loin.
  3. In a separate bowl, mix together the chopped spinach, breadcrumbs, Parmesan cheese, minced garlic, sun-dried tomatoes, and melted butter. Spread this mixture evenly over the flattened side of the pork loin.
  4. Roll up the pork loin tightly, securing it with kitchen twine at 2-inch intervals.
  5. Place the pork loin on the prepared baking sheet. Arrange the halved potatoes around the pork.
  6. Sprinkle the potatoes with salt, pepper, and fresh rosemary.
  7. Bake for 1 hour or until the pork reaches an internal temperature of 145°F, and the potatoes are golden and tender, stirring the potatoes halfway through cooking for even browning.
  8. Let the pork rest for about 10 minutes before slicing. This helps the juices redistribute, making every bite moist and flavorful.
