Here’s everything you’ll need to bring this creamy delight to life:
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup small pasta (like ditalini or elbow)
- Fresh basil, for garnish (optional)
If you’re out of Parmesan, feel free to use Pecorino Romano for a sharper flavor. Or, swap heavy cream with half-and-half for a lighter version.
Instructions
Follow these steps, and soon you’ll have a pot of warmth ready to serve:
- Place the chicken breasts in the bottom of your crock pot.
- Add chicken broth, diced tomatoes, Italian seasoning, garlic powder, salt, and pepper to the pot. Stir to combine.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
- Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the crock pot.
- Stir in the heavy cream, Parmesan cheese, and pasta.
- Cover and cook on high for an additional 30 minutes, or until the pasta is tender.
- Serve hot, garnished with fresh basil if desired.
