  • 1 pound ground beef (or substitute with ground turkey for a lighter option)
  • 1 medium onion, diced
  • 1 bell pepper, chopped (any color)
  • 2 cups beef broth
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 packet taco seasoning
  • 8 ounces uncooked pasta (penne or rotini work best)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Transfer the cooked beef to your crock pot. Add in the diced onion, chopped bell pepper, beef broth, diced tomatoes, tomato sauce, and taco seasoning. Stir everything together.
  3. Set your crock pot to low and cook for 4-5 hours. This is when you can step away and let the crock pot work its magic. I often use this time to catch up on a book or sneak in a quick nap.
  4. In the last 30 minutes of cooking, add the uncooked pasta to the crock pot. Stir well to ensure the pasta is covered in the sauce. Keep an eye on it to make sure it doesn’t overcook.
  5. Once the pasta is cooked to your liking, sprinkle the shredded cheddar cheese on top. Cover and let it melt for about 5 minutes.
  6. Taste and adjust the seasoning with salt and pepper as needed before serving.
