- 1.5 pounds boneless, skinless chicken breasts
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 12 ounces uncooked penne pasta
- 1 cup fresh spinach leaves
- Optional: Red pepper flakes for a bit of heat
If you’re missing an ingredient, don’t fret. Substitutions are a home cook’s best friend. No penne? Try rotini or fusilli. Out of spinach? Kale is a sturdy stand-in. And if heavy cream feels a tad indulgent, whole milk will do in a pinch.
Instructions
- Lightly oil your crockpot to prevent sticking. Place the chicken breasts in the bottom and sprinkle with Italian seasoning, garlic powder, salt, and pepper.
- Add the chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, and minced garlic. Stir gently to combine.
- Cover and cook on low for 3 to 4 hours, or until the chicken is fully cooked and tender.
- Remove the chicken from the crockpot and shred it using two forks. Return the chicken to the pot.
- Add the uncooked pasta and spinach to the crockpot. Stir to incorporate, ensuring the pasta is submerged in the liquid.
- Cover and cook on high for an additional 20-30 minutes, or until the pasta is al dente.
- Give it a final stir, check seasoning, and sprinkle with optional red pepper flakes for a bit of heat.
As you prepare this dish, remember that cooking is an art, not a science. The first time I made this, I was skeptical about adding uncooked pasta directly into the crockpot, but trust me, it works like a charm!
