  • 1 can (14 oz) of diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Optional: A pinch of chili flakes for extra heat

Feel free to substitute butter beans with chickpeas or cannellini beans if that’s what you have on hand. And if you’re out of fresh ginger, ground ginger will do in a pinch.
