Ingredients
Scale
Every ingredient in this recipe has been thoughtfully chosen to bring out the best in each other, much like the meals my mom used to create with just a handful of pantry staples. Here’s what you’ll need:
- 2 cups of crushed chocolate cookies (for the crust)
- 1/4 cup of unsalted butter, melted
- 2 cups of cream cheese, softened
- 1 cup of granulated sugar
- 3 large eggs
- 1 teaspoon of vanilla extract
- 1 cup of dark chocolate, melted
- 1 cup of fresh raspberries
- 1/4 cup of raspberry preserves
If you’re missing an ingredient, don’t stress. Substitute raspberry preserves with strawberry if needed, or swap out the dark chocolate for semi-sweet if that’s what you have on hand. The goal is to make it work with what you’ve got!
Instructions
Now, onto the fun part—bringing this delectable dessert to life. Here’s how:
- Preheat your oven to 325°F. Grease a 9-inch springform pan and set aside.
- In a bowl, combine the crushed chocolate cookies and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then let it cool.
- In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. It’s like stirring love into a bowl, just like my dad used to do with his lentils and rice.
- Add in the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gently fold in the melted dark chocolate until well combined.
- Pour half of the cheesecake batter over the crust, followed by a layer of raspberry preserves and fresh raspberries. Top with the remaining cheesecake batter.
- Bake for 50-60 minutes, or until the center is set. My tip? Give it a gentle shake—if the middle wobbles slightly, you’re golden!
- Let the cheesecake cool to room temperature before refrigerating for at least 4 hours. Patience is a virtue, especially when it comes to cheesecake.
