- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups corn kernels (fresh, canned, or frozen)
- 1/4 cup mayonnaise
- Juice of 1 lime
- 1/4 cup crumbled Cotija cheese (or feta cheese as a substitute)
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, sliced (optional for a spicy kick)
Feel free to adapt the ingredients to what’s available in your pantry. The magic of home cooking is that it embraces flexibility!
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Once the oil is hot, add the chicken pieces, smoked paprika, garlic powder, cumin, salt, and pepper.
- Sauté the chicken for about 7-8 minutes, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the corn kernels. Cook for about 5 minutes until slightly charred, stirring occasionally.
- In a small bowl, mix the mayonnaise and lime juice until well combined. Stir this mixture into the charred corn.
- Return the cooked chicken to the skillet and toss everything together until well mixed.
- Prepare your bowls by adding a serving of rice, followed by the chicken and corn mixture.
- Top with crumbled Cotija cheese, chopped cilantro, and sliced jalapeños for an extra zing.
